Here's an easy tortellini salad:
1/2 lb. fresh tortellini
1/2 lb. broccoli
1 small head of cauliflower
2 tomatoes
1 red pepper
1 green pepper
1 small can (6-8 oz.) black olives
8 oz. Italian or Parmesan salad dressing, or more to taste
black pepper, to taste
Cook the tortellini if it isn't precooked. Rinse in cold water.
Wash the fresh vegetables and chop them into bite-sized pieces. Remove
seeds from the peppers but not from the tomatoes. I don't use the stems of
the broccoli or the cauliflower.
Drain the black olives. Combine the tortellini, vegetables and olives.
Pour salad dressing over everything and toss. Season to taste with black
pepper. Chill or serve at once.
Serves 2-3. Doesn't last more than a day or so.
